Stuart Gilby

Director of Food and Beverage

Stuart Gilby is Director of Food and Beverage at 42T, with nearly 15 years of experience in technical consulting, product development, and innovation strategy. He specialises in food and beverage innovation, developing new products, packaging, and production processes for major FMCG brands and ambitious start-ups.

His expertise spans everything from early concept development and prototyping to pilot line design, systems integration, and scale-up. He has also led sustainability-driven packaging and manufacturing programmes, with a particular focus on asset-constrained innovation.

Notable achievements include leading the creation of a novel home beverage machine and managing the full integration of a production pilot line reaching 800 units per minute.

He holds a PhD in Chemistry and Engineering from Cranfield University and a BSc (Hons) in Chemistry with Analytical Chemistry and Toxicology from the University of Hull.

Life outside work

When he’s not working, Stuart’s probably off exploring somewhere new with his family, watching Peterborough United, or immersed in a good sci-fi or fantasy story, ideally with a bit of Star Trek involved.
